- 1 head Butter Lettuce or Romaine
- 1 Lb Organic Ground Turkey
- 1/4 Red Onion Diced
- 1/4 bunch Cilantro Chopped
- 1 Carrot Diced
- 1 Roma Tomato Diced
- 1/2 Jalapeno Diced (optional)
- 3 Tbsp Cocoaminos
- 2 Tbsp Coconut Oil
- 1 Tsp Salt
- 1 Tsp Pepper
- 1 Tsp Paprika
- 1 Tsp Cumin
- Smoked Salsa Roja
Wash the lettuce well and divide into 4 lettuce cups
Heat the coconut oil in a large skillet over medium heat and sautee the veggies for about 5 minutes.
Add the ground turkey and spices, and cook until the turkey is cooked through.
When cooked, add the cocoaminos and let cook for 5 more minutes.
Fill the lettuce wraps with the turkey mixture and top with the smoked salsa roja.
