Ingredients
  

  • 2 Zucchini
  • 1 Yellow Squash
  • 1 Red Onion Small
  • 2 Cups Marinara Sauce
  • 2 Roma Tomatoes
  • 5 Cherry Tomatoes
  • 2 tbsp olive oil
  • 1 tbsp oregano
  • 1 tbsp thyme
  • 1 tbsp basil
  • salt to taste
  • black pepper to taste

Instructions
 

  • Preheat oven to 400 degrees fahrenheit
  • Add the marinara sauce to the baking dish, and season with salt and pepper to taste.
  • Slice all of the veggies, and add to a large bowl with the olive oil, herbs and seasonings. Mix well.
  • Add the veggies to the baking dish, starting on the outer edge and continuing in a spiral shape. Top with the sliced cherry tomatoes.
  • Bake for 30 minutes and serve hot.
