This delicious mediterranean style baked cod recipe is easy, delicious, fast, very filling, and loaded with nutrients that are an essential part of a healthy diet
Season the 3 cod fillets with Salt, Pepper, and Cumin to taste
Prepare a baking sheet with wax paper and small amount of Olive Oil.
Place the season cod fillets on the baknig sheet.
In a separate bowl, combine the 1/2 Cup Cherry Tomatoes, 1/2 Cup Leeks, 1/2 Cup Red Onions, and 1/2 Cup Black Olives with more Salt, Pepper, and Cumin to taste. Add to the baking dish.
Add the 1 Tbsp Olive Oil, 1 Tsp Lemon Zest, 1 Tsp Oregano, Cayenne Pepper, and 3 Sprigs Dill, and bake at 400 degrees fahrenheit for about 20 minutes.
For the Sauce
Combine the 1 Tbsp Olive Oil, 1 1/2 Tbsp Apple Cider Vinegar, Salt, and Pepper and serve over the top of the fish.
