Ingredients
  

  • 6 Chicken Thighs Organic, Pasture-Raised
  • 1 Tbsp Coriander Seeds
  • 1 Tbsp Smoked Paprika
  • 1/8 Tsp Ground Cinnamon
  • 1 Tsp Chipotle Powder
  • Salt and Pepper To Taste
  • 1/4 Red Onion Cut into rings
  • 2 Jalapeños Sliced (optional)
  • 2 Tbsp Olive Oil

Instructions
 

  • Preheat your oven to 400 degrees f.
  • Get a large bowl and add one tablespoon of oil with the rest of the ingredients except the chicken, onion, and jalapenos
  • Mix well and then add the thighs, ensuring that each piece of chicken is covered with the spice rub.
  • Add the chicken to a large baking dish and add the onions and jalapenos. Place in the preheated oven with the remaining tablespoon of oil and bake chicken thighs for 20-25 minutes.
  • At this point, set your oven to broil on high temperature and cook for 3-5 more minutes until you have crisp skin that is golden brown. Remove from oven and serve.
