If you are making your own refried beans, add the black beans from the can to a blender with a piece of white onion, a few pieces of cilantro, 1/4 tsp of ground cumin, salt, and pepper to taste. Blend and cook in a small pot over medium heat for about 3-5 minutes and set aside. You can also use beans that are already refried.
In another skillet, add the olive oil and cook the eggs to your desired level of doneness. Typically, these eggs are made sunny side up. It should take about 2 minutes per side. Set aside.
In the same pan, heat up the tortillas until slightly crispy and warm and then put them on a plate.
Spread the refried beans on the tortillas and top with the eggs, salsa roja, and serve with ham and potatoes.
