  • If you are making your own refried beans, add the black beans from the can to a blender with a piece of white onion, a few pieces of cilantro, 1/4 tsp of ground cumin, salt, and pepper to taste. Blend and cook in a small pot over medium heat for about 3-5 minutes and set aside. You can also use beans that are already refried.
  • In another skillet, add the olive oil and cook the eggs to your desired level of doneness. Typically, these eggs are made sunny side up. It should take about 2 minutes per side. Set aside.
  • In the same pan, heat up the tortillas until slightly crispy and warm and then put them on a plate.
  • Spread the refried beans on the tortillas and top with the eggs, salsa roja, and serve with ham and potatoes.
