Homemade Gluten-Free and Grain Free Tortillas

Below: Find out how you can keep eating tortillas even if you are practicing a non-inflammatory diet. These are grain and gluten free and delicious!

Tortillas are used in many differents cultures, but especially in my home country of Mexico. In Mexico, tortillas make an appearance at basically every meal, and even though they are delicious, they are not particularly healthy, especially if they are made with refined flour or genetically modified corn.

What am I referring to when I say “genetically modified”? Did you know that statistics show that 90% of the corn that we eat is genetically modified, meaning that they have been changed in a way that it makes it more difficult for our bodies to recognize it and in turn digest it?

That is one of the reasons why it is important to look for more healthy alternatives if we want to continue eating amazing tortillas, which in my case is a huge priority! There are so many products that come from corn, like oil, flour and more. Corn is cheap, so it makes sense that it would be used so much, but it also can cause a lot of stress on our bodies, leading to sickness, obesity, and inflammation.

Those are some of the reasons why I decided awhile back to stop consuming corn, which includes something I have been eating since I was a child – corn tortillas.

I thought it would be hard, and living without tortillas at all would probably be impossible, but the good news is that there are some very easy recipes to make gluten-free tortillas which have no gluten or grains, which is perfect for my non-inflammatory diet lifestyle.

How do you make grain-free and gluten-free tortillas?

This tortillas recipe, which are also known as cassava flour tortillas, is about as simple as it gets and you can make them in a matter of minutes using the following ingredients:

  • 3/4 cup organic cassava flour (from the yuca plant)
  • 1 pinch of salt
  • 1 room temperature egg
  • 1 cup of luke warm water

That is it! That is all you need to make these delicious tortillas which can be used in a variety of recipes where you would normally use a traditional tortilla.

To make the tortillas, combine the cassave flour and the salt in a large bowl. Then combine the egg and water in a separate bowl, mixing well. Add the dry ingredients to the wet ingredients and mix well until a dough is formed.

Make balls of dough approximately 2 inches in diameter and place on a tortilla press. Press it into a flat circle and then heat up a non-stick pan over medium heat. Add each one and cook for about one minute on each side.

Repeat with the rest of the dough and serve warm! You can use these homemade tortillas for soft tacos, fajitas, enchiladas, tostadas, and more.

As a final note, of course corn tortillas are so tasty and they can’t be 100% imitated, but these gluten and grain free tortillas are much better for our health and I am sure you will like them too! The best thing is that you can continue eating tortillas and not have to worry about the health issues and inflammation that they can cause.

Ingredients
  

  • 3/4 cup organic cassava flour
  • 1 tsp salt
  • 1 egg room temperature
  • 1 cup warm water

Instructions
 

  • Combine the cassava flour and salt in a large bowl
  • Combine the egg and water in another bowl and mix well
  • Combine the dry and wet ingredients and mix well until a dough is formed
  • Form 2 inch balls with the dough and then add to a tortilla press.
  • Heat on each side on a hot skillet
